Super tasty and fairly quick, although I KNEW I was going to burn myself on the skillet handle. Would make for an awesome dinner on the deck. Works reasonably well as leftovers but is so insanely rich it's hard to consume in quantity, and since Corey can't eat it, best prepared for company.

Deeeelicious, especially with the chicken variation, although I skipped the corn. A dollop of sour cream would be tasty too.

Editing to add that diced mango makes a really nice addition to this one!

Week 1.2

I wrote this up at the beginning of the week and never got around to publishing it :P

Well, Week 1 was mostly successful, despite sushi with coworkers at the beginning (it may be takeout, but at least it's healthy takeout, right?) I have ditched the calorie counting, which involves going hungry for a few days while getting used to it, and dammit, the armpit of the year is bad enough already without having to deal with that. One thing at a time. I will worry about that when I am a ninja of effortless home cooking.

So an additional $57 of groceries brings the final count to $222 for this week, $125 of which was spent on the AFP. Plus $20 for sushi. Corey apparently has been buying lunches - sigh - so that's another $60 in takeout...oops, no, $48, it was a 4-day week...for $68 total.

For food this week:

Breakfast:
* Cottage cheese and pineapples


Snacks:
* Oranges
* Crackers, goat cheese, hummus
* Miso soup w tofu and green onions
* Cashews
* Smoked salmon (divide into portions and freeze)

Lunch:
* Salad - kale or faux caesar
* Leftovers

Dinner:
* Pulled pork sandwiches
* Flank steak and salad (FC Cook Fresh)
* Orange and balsamic veg saute (FC Cook Fresh) and lemon vermouth chicken
