Warm Potato Salad with Lemon and Fresh Herbs
Online here. Possibly the tastiest potatoes I've ever had. Works well as leftovers, too, although the garlic gets rather sharper when cold.
Argentine Spice-Rubbed Flank Steak with Salsa Criolla
Online here. Was out of chili powder, so used Lee Kum Kee chili-garlic sauce instead. Impressively make-ahead friendly, straightforward, and quick considering how fancy it turned out. Does well as leftovers, too. I broiled the steak (4-5 min per side for medium rare) instead of grilling it, since I am loath to sacrifice deck or yard space to a BBQ.
Muffin Generator
Oh, Fine Cooking magazine, you never let me down. Must experiment with this muffin recipe generator (especially with chocolate chips and raspberries - yummmm). Substituted buttermilk for whole milk.
Honey-Mustard Chicken and Broccoli Skewers
Online here. Kind of cries out for a side dish. Didn't try the cheesy potatoes, since those were pretty much guaranteed to mess with Corey, but maybe a couscous something-or-other might be in order?
Pulled Pork of Leftover Doom
I don't usually love pork, but this is make-ahead heaven. The base recipe involves about 5 minutes of effort, and the variations all look lightning-fast and flavourful. And for an added bonus, they're pantry-reliant enough to clock in at $3 and change per serving.
